HERBFARM HAYMAKER'S SWITCHEL

to make 2 quarts:

¼ c. mint*

¼ c. lemon balm*

¼ c. freshly-squeezed lemon juice (~ 1 large lemon)

¼ c. orange juice

¼ c. simple sugar syrup (see below)

2 qt. Ginger ale

Make simple syrup (by volume 1/3 sugar and 2/3 water brought to a boil). Squeeze citrus juices. Chop mint and lemon balm very fine.

Add orange and lemon juices to the hot sugar syrup. Remove from heat. Add chopped mint and lemon balm and let steep, covered in the hot sugar syrup for 1 hour.

Strain mixture through a fine sieve or cheese cloth. Combine with 2 quarts of ginger ale. Serve chilled.

*If you do not have lemon balm, use all mint. In winter, use 1/3 as much dried mint for fresh.
